Hyatt Regency Rome Central is seeking an experienced and dynamic Food & Beverage Director to join our pre-opening team.

The role will report to the GM.

Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a newly renovated contemporary 5 star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.

The hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues.

Main duties and responsibilities:

As the F&B Director, you will play a key role in the successful launch of our property, overseeing the strategic planning, development, and operation of all food and beverage outlets. Hyatt Regency Rome Central promises to deliver exceptional culinary experiences, and we are looking for a leader who shares our passion for excellence.

In detail:

  • Lead the pre-opening planning for all F&B outlets, including concept development and operational setup.
  • Ability to work autonomously and manage workload and key deliverables within a project opening timeline.
  • Creating and implementing standard operating procedures (SOPs) for the food & beverage department, including service standards, food handling protocols, sanitation procedures, and customer service guidelines.
  • Interview, select, train, schedule, coach and support associates, ensuring they perform in accordance with established brand and hotel standards.
  • Develop and implement the F&B strategy aligned with the hotel's overall vision, focusing on quality, profitability, and guest satisfaction.
  • Prepare and manage the F&B budget, including cost control, inventory management, and financial reporting to ensure profitability.
  • Ensure compliance with health and safety regulations, as well as Hyatt's brand standards and operating procedures.
  • Identifying and establishing relationships with suppliers, negotiating contracts, and ensuring that deliveries are in line with quality standards and budgetary constraints.
  • Monitor and forecast food beverage revenues and expenses to ensure company goals are met on a monthly and yearly basis.
  • Work with the management team to establish pricing strategies for food and beverage items that are competitive yet profitable.
  • Collaborating with the Executive Chef and culinary team to create menus that align with the hotel's concept, target market, and budget.
  • Work closely with the marketing team to develop and execute promotions, events, and campaigns that enhance the F&B offerings.

Skills and requirements:

  • Proven experience as an F&B Director within Hotels & Resorts with international exposure.
  • Experience with pre-opening processes is highly desirable.
  • Strong leadership and team management skills.
  • Exceptional knowledge of food and beverage operations, with a focus on guest satisfaction.
  • Ability to work in a fast-paced, dynamic environment and manage multiple projects simultaneously.
  • Fluent in English and Italian. Additional languages are a plus.
  • Strong communication and interpersonal skills.
  • Familiar with HACCP, able to instruct, implement and supervise.
  • Excellent organizational skills and attention to details.
  • Ability to quickly adapt to challenges and manage complex or dynamic situations.
